A dessert wine produced from our premium grown Marechal Foch grapes. Made in a port style using the continuous fermentation method. Our Style-Marechal Foch is ripened on the vine until 26-28 percent sugar is achieved. The Foch is then fermented on the skins to extract colour and then the wine is transferred to oak where the wine continues to develop. Aged 8-12 months in new oak.
In select years Wild Goose will produce a Blanc de Noir (blush) wine using both Pinot Noir and Merlot grapes. Only the most premium grapes are used when producing a blush. Our Style – Once the red grapes are pressed the juice is quickly drawn off and fermentation induced. The juice is treated as white wine juice where the fermentation will be carried out on a slow basis trying to maintain as much fruit as possible.
Grows very well in the Okanagan. Enjoys long hot summers and warm autumn seasons. Exhibits plum, berry and black current overtones. Medium to intense in darkness. Our Style-Maximum hang time in the vineyards is the key to a good Merlot. Our Merlot is always bottled with medium tannins that make it a perfect match with food or for ageing.
Only produced in years when winemaker Hagen Kruger feels the fruit from that vintage far exceeds the highest quality standards. Our Style-10 barrels of Merlot are hand selected by our winemaker and cellared and aged longer then our regular Merlot using new French and American oak.
The “Burgundy” grape. Widely grown in the Okanagan. Quality is very dependant on the weather. Cherry, raspberry, and soft tannins typify the flavours of Pinot Noir. Our Style-A hot fermentation helps extract colour and flavour. The wine is then barrel aged in American and French oak for a period of 6-12 months.
